- 1 cup gluten-free all-purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 1/2 cups milk (dairy or non-dairy like almond or coconut milk)
- 3 large eggs
- 2 tablespoons melted butter (or melted coconut oil for a dairy-free option)
- 1 teaspoon pure vanilla extract
In a large mixing bowl, whisk together the gluten-free flour, sugar, and salt until well combined.
In a separate bowl, whisk together the milk, eggs, melted butter (or melted coconut oil), and vanilla extract.
Gradually pour the wet ingredients into the dry ingredients, whisking continuously until you have a smooth, lump-free batter. The batter should be thinner than traditional pancake batter but not watery.
Let the batter rest for about 10-15 minutes. This resting time allows the flour to hydrate and will result in a better texture for the crepes.
Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a little butter or oil.
